Husband loves his beef meat. He could devour the entire pot of bone broth all by himself and be content for the rest of the day.
Sup tulang (pronounced: soup too-lung) is the Malaysian/Singaporean version of bone broth. Bone soup is the literal translation of sup tulang. Lol.
Unlike Western-style bone broth, this sup tulang is infused with aromatic herbs and spices, giving a wonderful depth of flavour and smell to it. It is a very versatile recipe as it works just as well for beef, chicken or lamb, or even oxtail.
This traditional recipe has lived in my family for generations. Though, some of the ingredients used by my grandmother in her mother's recipe is hard to find in this part of the country, I had to adept it with a modern-fused ingredients instead.
Ingredients:
✓ 1kg of meaty bones e.g. beef short ribs/necks - boiled until tender
✓ 1 tablespoon of olive oil
✓ 1 pack of sup bunjut (soup spices)
✓ 6 cloves of shallot* - finely chopped
✓ 4 cloves of garlic* - finely chopped
✓ 2 inch of ginger root* - thinly sliced
✓ 2 medium potatoes - cubed
✓ 1 stalk of celery - sliced
✓ 1 stalk of parsley - chopped
✓ Salt and pepper to taste
Steps:
1) Boil 1kg of meaty bones until tender in a pot under high heat.
2) Heat up the olive oil in a pan under medium heat.
3) Sauté the asterisked ingredients (*) until fragrant and golden.
4) Add the sautéd ingredients into the pot and lower the heat.
5) Add sup bunjut into the pot.
6) Let the broth simmer on a low heat for a few hours until the meaty bones are tender.
7) During the simmering process, add in sliced celery and cubed potatoes.
8) Add some salt and pepper to taste.
8) Off the heat once the meat and potatoes are tender.
9) Garnish with finely chopped parsley.
10) Dish and serve while still hot!
Sidenote:
✗ The longer you simmer the soup, the tastier it will be.
✗ Don't add in potatoes too early, or else they will become too tender.
This is my version of sup tulang, slightly modern and easier compared to my family's original recipe, but it still tastes the same. I think. Hehe. Well, have fun cooking ladies! Good luck in impressing your dearest husband. 😁
